HOMESICK NO MORE FOR SINGAPOREANS

There is nothing like a plate of wholesome chicken rice here in Singapore. It is yummy yum yumz. Mr Washy tried Tian Tian Chicken Rice in Maxwell Food Court and there is no turning back. This place is so popular that there is usually a queue, and they'll close earlier than their stated 8PM closing if they sell off all their chicken in advance.

This is the ridiculous queue. One thing we taught Mr Washy about Singapore is that you know which stall is selling ultra delicious food by sussing out the queue. We packed the chicken rice twice the last time he came to Singapore! Once to the Zoo and the second time to the Sentosa Resort for lunch. It beats any restaurant dishes.

This is what their chicken rice looks like. You have to take it with the chili sauce. Chicken rice is never complete without their chili sauce.

Thank god for brands like Prima Deli and Asian Home Gourmet, we can all make wonderful chicken rice overseas without much fuss.

Ingredients:
  • 1 packet Asian Home Gourmet Singapore Hainanese Chicken Rice SpicePaste©
  • 450g (1 lb) chicken thighs
  • 730ml (3-1/3 cups) water
  • 250g (1½ cups) uncooked rice
  • soya sauce and sesame oil to taste (optional)
Methods:
  1. Bring water to the boil in a saucepan. Add chicken; cover and simmer for 15 minutes or until cooked. Reserve chicken stock. Remove chicken and cut into pieces. Season to taste and set aside.
  2. Mix rice, chicken stock (500ml or 2¼ cups) and SpicePaste© in a saucepan.
  3. Bring to the boil and stir once. Reduce heat; cover and cook for 12 minutes or until cooked. Leave to stand for 5 minutes before serving with cooked chicken.
Variations:
You may use the spice paste to stir fry 675g (1¾ lb) of meat or vegetables of your choice.
Cooking Tip:   
Using Rice Cooker, Put rice, 500ml (2¼ cups) water, SpicePaste© in the rice cooker and mix well. Set for cooking. Serve rice with grilled or roast chicken.
Ingredients:
Soya bean oil, garlic, ginger, salt, lemongrass, shallot, chicken flavor: 2%

The Asian Home Gourmet sachet makes good Chicken Rice but you will need the Prima Deli mix to make a good Chicken Rice Chicken. You cannot just boil the chicken in water. The chicken needs to be boiled in water with some flavor.


We found this recipe by scratch just in case we are desperate and cannot find the sachets to buy.


Ingredients For Chicken:1 chicken (about 2.5 pound)
2 spring onions
1 large piece of ginger, smashed
3 cloves garlic
1 tsp salt
1 tsp of pepper
1 tbsp sesame oil
1 tbsp of light sauce sauce


Garnish :Cucumber - slice
Tomato - slice
Spring Onion and coriander - thinly slice


1. Wash chicken and remove excess fat. Stuff chicken with spring onion, ginger and garlic.
2. Fill a big pot with water and make sure the level is enough to immerse the chicken. Bring to boil and put in the chicken and cook over low heat for 45 minutes or until the chicken is cooked (depend on the size)
3. Remove chicken and drain the liquid from the cavity and plunge the chicken into cold water for 5 minutes. Drain well. In a small bowl mixed sesame oil, salt, pepper and light soy sauce and rub it all over the chicken. Set aside.


Ingredients For Chicken Rice:2 cups of Jasmine rice
2 cloves of garlic
1 small piece ginger, smashed
2 pandan leaves, knotted
chicken stock (the poaching liquid)
1 tsp salt


1. Wash rice, drain in a colander and leave to stand for 10 minutes.
2. Transfer rice to rice cooker and add in the chicken stock (enough to cook the rice), pandan leaves, ginger, garlic and salt. When the rice is done remove the garlic, ginger and pandan leaves.


For the Chili Sauce :
5 fresh red chillies
2 " of fresh ginger
4 cloves of garlic
juice of 2 lime
4 tbsp of vinegar
2 tsp of sugar
some salt


Put everything in a blender and blend until smooth.
