SKIP THE GYM, MINCE AND BE REWARDED WITH A CHICKEN LOAF

It was very cold and gloomy and we had no reason to go out. We had all the energy in us and we needed to let it out. Ok, it was time to vent that extra energy on something and hopefully create something useful out of it. It was going to be dinner time in a few hours and we thought perhaps kneading dough would help? We got a bit bored with the options of a doughy dinner. We thought kneading some dough to make dumpling wrappers would be grand, but we didn't have all the ingredients we needed. We decided to mince some chicken instead. We have made this before and it is an easy recipe for leftovers or for using up that single carrot or leek.

DIRECTIONS :

We minced a couple of chicken breasts with a cleaver. The cleaver is the way to go. It is sharp and heavy enough and with enough arm work, you would get a mince that is better than what you can get at the supermarket. We also minced the odd carrot in.

Add an onion. We love onions. It usually makes the loaf soft and sweet when it melts in the oven. Mix the ingredients together and season.

This is the part that would be a bit strange for some of you. We added some expired Guinness and flour. Stir. What you should get is a runny doughy consistency. The mixture should drop from the spoon. Grease a loaf pan and pour mixture. Bake in oven for about 45 minutes at 180 degrees celsius.

Let your loaf sit before cutting and serving. Cooling the loaf first would give you solid slices rather than flimsy ones. This is an easy recipe which we concocted. It is super yummy with sweet chili sauce.
