Mr Washy bought a pumpkin and asked us what he should do with it apart from the obvious carving it into a Jack O' Lantern when it isn't Halloween yet. Our suggestion to him was to turn it into a crock pot, dutch oven of sort in the oven.
We have half cooked rice and then baked it in a carved pineapple with the top. What turned out was a beautifully baked pineapple rice with all the pineapple juices infused into the rice and meat. Ohhh... salivate. There is something oohhh so good about baking food in the enclosed fruit body. It works like a crock pot, retains and infuses all the sweetness and flavors. They look great and professional as serving suggestions too.
Make a baked rice or meaty stew with the carved out pumpkin and get a more than savory dish out of it.
