BREAD SOUP : THE REAL PEASANT FOOD

We just got back from our Italian Roadtrip and everything is still in a mess. Still loads of laundry and cleaning to do. We have a baguette which fed us on our way back but got pretty rock hard towards the end. We decided to be really fidgety about it and not put this little baguette which served us well, into the bin.

We boiled the rock hard bread in some stock. In this case, our broccoli stock from last night.

The rock softened up and we let it cool before we blended it.

We stir-fried some garlic, red onion and tomato pulp.

We then added the blended baguette and put in loads of herbs (sage, rosemary, bay leaves and garlic chives) for it to stew. From now, it is just taste and taste until it tickles your palette. We would probably add some spices later, depending on how the soup goes.

To be served with olive oil, balsamic and fresh herbs tonight.
