A MICROWAVE + A POTATO + 5 MINUTES = HOMEMADE POTATO CHIPS

OK, we are not fans of potato chips because we never know what is inside. Hydrogenated fats and all. Also, we cannot stop once we start. However, we made potato chips this morning. We have a lot of potatoes and so we were searching for recipes. This is probably the easiest thing ever. And so healthy for your kids and yourself because you can control the amount of salt and oil (olive oil instead of vegetable oil if you prefer). Add a little pepper, or paprika, or herbs?

This our very rough, or rustic if we may, attempt of slicing the potato with our vegetable peeler. We do not have a mandolin so this is about the best we can do next to using a knife.

Homemade Potato Chips
Ingredients:

1 potato
Oil and brush
Parchment paper
Salt and Pepper

Directions:
Cut a piece of parchment paper to fit on a plate which you can fit into the microwave.

Slice the potato into paper thin slices using a mandoline, vegetable peeler, or sharp knife. Coat the parchment paper with some oil and place the potato slices in a single layer. Brush the potato slices with some oil and lightly sprinkle with salt and pepper. Cook for 5-6 minutes. Cooking times will vary based on the strength and power of your microwave. Some chips may turn very dark brown. Ideally you want them light and golden. Repeat the process until you’ve used your entire potato. Enjoy! Yea!
