FROM PROJECT LUNCHBOX TO PROJECT SANDWICH : SOME SANDWICH FILLER IDEAS

It is amazing how our goodwilled Project Lunchbox has been turned into Project Sandwich for a while already. Lets just say that Mr Washy does not feel too macho with his lunchboxes. Yea, and his colleagues are not too nice to make fun of him either. We never thought we would say this so soon but we would be stocking up on sandwich fillers this week for a busy week. Here's what we are making this week and what is cheap at the supermarket.

The supermarket is having a promotion of canned corn. We love corn. We love it so much that we can even eat corn out from the can. Love it. Mix those corn kernels with mayonnaise, salt and pepper and you have a tasty sandwich filler.

Need we say more? Mayonnaise is a sandwich maker's best friend.

We got some smoked mackerel which we have to de-bone. Smoked mackerel is so wicked with sauteed onions and cream for a pasta sauce. But it is also good to be mixed with mayonnaise as a sandwich filler. We mixed it with some corn kernels for that extra omph and fiber.

Cucumber. Always good to have around for some greens in your sandwiches. Oh, also on promotion in supermarkets this week.

In a sandwich city like Amsterdam, some kind of ham is always on promotion at the supermarkets. Always always good.

Ketcup and mustard? Could be a bit messy unless you spread them like butter on the bread.


Coleslaw! So delicious. So good using white cabbage, but we do love using red cabbage for those extra anti-oxidants.

Just some sandwich ideas for us this week. Hope they are of some use to you.

 Oh, and we bought enough fruits for a good grab and good. Mandarins, apples (kanzis of course) and kiwis.
