HOW TO PLAN YOUR DINNERS FOR A BUSY WEEK

It is going to be a busy week for us and we are trying hard to think of what to do for meals. Sandwich fillers are one thing for luncheons but what about dinners? This is what we are planning if you do not have enough time to cook. The trick is perhaps to really cook ahead of time. Here are some things you can cook ahead and would actually taste much better a day or 2 later.

MONDAY
We cooked our pork goulash today. It needs a long time to cook and to be ready. As anyone who is a season cook would know, stew tastes so much better the next day and after. As Mr Washy has to rush his dinner today before making his way to a meeting, this stew that is to keep for the next few day worked as a quick dinner for him too.

TUESDAY
This is probably the day we will be free before the busy starts. So, since mussels are cheap this week, we will be having mussels. We will serve it with noodles. Yummy. It will be either white wine with garlic or a Thai coconut broth for Mr Washy to pick. We will also be cooking our ragu sauce today. It will need at least 2 hours to stew.

WEDNESDAY
That is right. It is pork goulash from Monday for din din. We will have a coleslaw on the side, as well as pickled cucumber.

THURSDAY
Our ragu cooked on Tuesday to be served with fresh pasta, with a salad on the side. And grated parmesan!!! No, maybe pecorino.

FRIDAY
This is still thinking in process. We feel like having mussels again but we know it is going to be too much for the Washy. Perhaps a stir fry? Still thinking. But Friday is more or less easy. It can be a long night of eating. Open a bottle of wine, some tapas, while slowly cooking away in the kitchen.
