We are getting very excited about our Dusun retreat with T and so we started to watch some video on barbecues. We will have 2 evenings of good BBQ in the rainforest. It will get a bit chilly at night but there is nothing a good bbq and some cuddling will not help.
Jamie O does some really good ones. When you are out barbecuing, you really want to be as rustic as can be. Here are some screen grabs of him cooking up some shellfish. And what is more exciting, smoking them with some wood and bay leaves.
If you do not have a wire mesh, it is easy to pop into your kitchen and grab the grill tray from the oven.
Jamie is cooking seafood this time. He has picked a good variety of prawns, razor clams, langoustines...etc.
He added some wood on top of the coal. Though, we are curious about the wood. Surely we cannot just put any old wood on it, can we?
He then put a handful of bay leaves. The oils from the bay leaves that will be released by the BBQ will perfume the shellfish.
A heat-proof pyrex bowl will work well as a cover for all the seafood and smoke it well. You will not need to wait too long for it to be cooked. Then, toss the shellfish with chopped herbs, olive oil and salt, with a good squeeze of lemon, be careful to save the delicious juices from the clams into the toss.
