Talking about cooking at home and from scratch, one would need certain equipments. We do not claim to be experts but we would like to share some things which we cannot do without in a kitchen.
THE DUTCH OVEN
We totally love this cast iron pot. It is good for the stove or the oven, good for stews or even making bread. You can make use of it as a small oven. Simply heat it up. The cast iron retains and distributes the heat evenly within the pot to create an oven-like environment. It is like a slow cooker too. Saves you the money to get an oven (if you don't already have a working one), pot, slow cooker...
THE SOUP POT
You cannot do without this. You will need this for boiling pasta, soups, congee, curries...etc
THE NON-STICK WOK
We thought of a pan, but comparing a pan and a wok, we picked the wok. It is easier to stir-fry rice, noodles and everything else without makign a mess. You can still use it as a pan no doubt.
THE RICE COOKER
This is our favorite kitchen helper next to the dutch oven. The rice cooker is brilliant. We know how to cook rice in a pot, and yes, we mean perfect rice. But the rice cooker lets you create rice or pasta dishes without fuss. It is be a one pot meal without much washing up to do. You can also make soup or keep food warm in it. It can double up as a steam when you cook your rice too. Basically, it is easy, foolproof and precise. No more justification needed.
THE CLEAVER
There are many fancy knives to choose from but if you ask us to pick one, it would have to be the cleaver. If the Chinese chefs can do wonders with that one cleaver in their kitchens, so can we. It is robust, sharp, and you can cut anything with it. It can even crush bones. Somehow we always tend to cut ourselves with small dainty knives.
THE KITCHEN SCISSORS
Brilliant for opening packages. We love to use the scissors for cutting food too. Chicken wings, spring onions, noodles, vegetables... There are just some things a knife cannot do as well as a pair of scissors.
THE TONGS
We call the tongs our kitchen hands. So easy to use and they are just like your heat-proof extended hands/fingers. Makes cooking pasta, flipping meats seem like a breeze.
THE UNIVERSAL GRATER
To save time, the universal grater is like a few dozen dwarfs holding knives helping you to slice that carrot, turnip, onions...etc.
THE BLENDER
The wonderful machine that gives us smoothly blended soup, refreshing smoothies, gorgeous frozen banana ice-cream, quick-and-easy hummus, tongue-slapping salsa, the lazy pancake batter, homemade relishes and sauces... oh oh oh, and... come on, do you need more?
THE ONIGIRI MOULD
We cannot make onigiri without the mould. We tried it once and the onigiri was all over our hands when we tried to shape it. We ended up eating our hands instead. This is the essential piece of equipment if you want to make anything Japanese in your kitchen that looks professional.
