We have recently relocated to Europe and moving into a new place means new dining room furniture and new kitchen wares and gadgets. Hooray! We sometimes sit in our lounge and daydream about the numerous kitchenwares we can own. Don't get us wrong, we are not wannabes, or at least we don't think we are. We love our Le Creuset and cast iron wares. And we swear by them. We also like to explode new utensils. We know a lot of people frown about silicon wares because well, they are made from silicon nonetheless.

We have been baking muffins for breakfast and as sustainable as we like to be, we are omitting the muffin wrappers. If you still have reservations about silicon/silicone products like we used to, check out our demo here. We are not superb bakers yet but these steps will show you our crazily quick and easy muffin making.


This is our cramp little work station. That is right, we use a blender. Less to clean, no need for wrist-breaking whisking. Superb and quick. Here is a quick recipe: 

1-1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup melted butter or margarine
1/4 cup milk

1 extra large egg, beaten
1 teaspoon vanilla extract
1 cup (large) peeled, finely chopped apple
1 package (1 cup) Raisins
  • HEAT oven to 400 F. Grease or line 12 (2 -inch) muffin cups with paper baking cups.
  • COMBINE flour, sugar, baking powder, cinnamon and salt, mix well.
  • COMBINE butter, milk, egg, vanilla and apple.
  • ADD to flour mixture; stir just until dry ingredients are moistened.
  • FOLD in raisins.
  • SPOON batter into prepared muffin cups.
  • BAKE at 400 F in upper third of oven for 20 to 25 minutes or until toothpick inserted in center comes out clean.
For 24 mini muffins, bake 15-17 minutes.
VARIATION: Substitute grated carrot or zucchini for chopped apple.
Makes 12 muffins.

We are not crazy to blend those raisins. We don't like whole raisins in muffins so blending it, not making it into a shake of sort, is fine chopping if you must.

Here is our trusty 12-muffin tray.

Pour your muffin batter into the muffin cups with your blender jar. How easy is that? Opps, some of them are too full. Notice we didn't need to grease the tray.

Nice muffin tops.

This is the miracle of it. The silicon does not give out a rubber/plasticky/siliconey smell. It doesn't melt and nothing sticks on it! This is less than 10 minutes of bringing it out from the oven. The silicon cools down pretty quickly and is safe to touch. What you do is to invert the silicon from under the muffin.

And pops it comes.

Perfectly unbroken muffins without muffin wrappers. Do you actually need wrappers when they come out like this? Note that you don't even need a knife to separate the muffins from the walls of the tray.

Can cleaning the silicon ware be any easier than a quick scrub? No.

Your muffin needs more baking soda and raising flour so it does not sink after you have taken out of the oven.
In fact, you don't need a blender too just beating with a fork quickly as you mix all the ingredients will create bigger air bubbles in your muffin to give it the shape and structure. Blender might not give you the desired result. Good luck!
