We made eggless pancakes this morning. We did wake up with Mr Washy and we are quite proud of it. Why eggless? We do not have eggs. We found eggless recipes last night and thought we would give it a go. The rising agents were vinegar and baking powder. It was ok. They were decent. But not great. Eggs somehow make cakes and pancakes rise better. Eggs make them fluffier and richer, more fragrant. If we had eggs, we would have added them in. We can also see the merit in eggless pancakes for people who are allergic to eggs.
