A PICKLING AFFAIR TO SAVE A CUCUMBER

That fridge of ours is driving us mad. We have adjusted the settings already but it is still freezing up stuff. Perhaps the fridge is not that full now so it is freezing up?

The cucumber was the victim this time. We decided to pickle it.

This is our rough guide to pickling:
  • Slice the cucumber into strips.
  • Slice some onions if you like.
  • Prepare pickling solution in the jar that you have washed/sterilized. We used distilled vinegar, sugar, ground cinnamon and nutmeg and whole cloves. Make this to taste. Some people like to slow heat the solution on the stove but we think it is ok just mixing it together. We are going to leave this to pickle over 2 weeks anyway.
  • Refrigerate.
It takes some time to enjoy the harvest of this but it is well worth it when you can save a cucumber like that. It wasn't totally frozen so we could still get some pretty firm flesh out of it. If your cucumber is completely frozen, the only thing we suggest to salvage it is to blend it with some vodka and sugar syrup. Enjoy.

try blending your frozen cucumber without the seeds with lemonade. My dad used to make this for gatherings. I remember it was a hit with almost everyone asking for the 'secret recipe'
